Fill yours with this recipe (while sipping some for yourself) and you won’t have to chase down the kids to eat their vegetables. It’s got: Kale, dates, apple, banana, almond milk or water and ice. That’s it! If you don’t have kale, use your baby spinach. No worries if your other tries at Green Smoothies weren’t met with eager reactions. This one will be a winner, that’s a promise! It’s not too sweet for moms and definitely not too sweet for kids. For the fresh dates, check out your produce section–just make sure you buy “Medjool” dates. Medjools are the sweetest and they blend really well.
The Great Green Smoothie
4 large ice cubes
1½ cups almond milk (or another milk of choice, or water), cold
2 packed cups torn, de-stemmed kale leaves
2 teaspoons fresh lemon juice (no worries if out of lemons)
4-7 pitted Medjool dates (more dates=sweeter smoothie)
1 banana, sliced
1 unpeeled apple, cored and sliced
Blend on super high!
For children, serve in little cups or fill their favorite ice pop molds. For mom, serve in a pretty wine glass.
Hint: for added extras, pop in 1 T of chia seeds or hemp seeds!
